Bagoong Fried Rice

For today's lunch, I prepared Bagoong Fried Rice and Fried fish. I know most of us love fried rice, yang chow fried rice and other types of fried rice. Since there was tomato sauce left in the fridge, I decided to cook this.


Here's what you need:

1 medium onion, chopped
6 cloves garlic, chopped
1 medium size ginger, cut in strips
3 pcs siling pansigang, sliced and seeded
1 cup ground pork
1 spoonful of bagoong (I used Barrio Fiesta spicy)
1 cup tomato sauce (I used Del Monte tomato sauce)
1/4 cup of onion springs, chopped
6-8 cups of cooked rice
1 green mango, cut in strips
1 egg, beaten and fried
oil for sauteeing


How to cook:

- Saute onion, garlic, ginger, siling pansigang, ground pork, bagoong for 3 minutes.
- Add tomato sauce. Simmer for 5 minutes.
- Add cooked rice. Mix evenly until all rice are colored.
- Add mango strips and spring onions. Mix well.
- Serve with fried egg on top.
